Method
Fried Onions (Birista)

Heat in a deep pan over medium heat. Fry , stirring often, until evenly browned.

This is the kachchi style of Hyderabad: the chicken goes into the pot raw in its yogurt marinade and cooks entirely in the sealed steam, while the rice above it finishes from the meat's juices. Everything depends on two things, rice boiled to exactly three-quarters done in well-salted, spiced water, and a tight seal, so follow the timings closely.
Notes
- Rice. Use aged long-grain basmati. Taste the boiling water: it should be noticeably salty, like the sea. The grains must still have a firm, white core when you drain them; they finish cooking on dum.
- Chicken. Bone-in thighs and drumsticks stay juicy through the long steam. Overnight marination gives the softest meat.
- Fried onions (birista) can be bought ready made: use about 1/3 cup. Fry your own until deep golden brown but never dark, or the biryani turns bitter.
- Spices you do not want to bite into can be tied in muslin and dropped into the rice water.
- Sealing. Foil under the lid works; a rope of dough pressed around the lid is the traditional seal.
- In the oven: after sealing, bake at 200 C for 30 to 40 minutes depending on the depth of the pot, then rest. If the chicken is still very wet, give it 10 minutes more.
- Browned bottom: for a lightly crisped layer of chicken, cook the last 5 minutes on medium-high heat; check the bottom first so it does not scorch.
- Serve with raita and mirchi ka salan.
Storage
Keeps 2 days in the fridge. Reheat covered, with a sprinkle of water, in a low oven or microwave until piping hot.
