Method

Massaman Curry Paste

  1. Grind , , , , , and together in a spice grinder until fine; tip out and set aside. Grind until fine and set aside separately.

  2. Blend , , , , , and into a rough paste. Add the ground chilies and spices and keep blending, scraping down often, until smooth.

  3. With a mortar instead: pound the lemongrass, galangal and cilantro roots with the salt to a fine paste, add the shallots and garlic and pound until fine, working in the ground spices and chilies as you go to absorb moisture. Finish by pounding in the shrimp paste.

Braised Beef

  1. Cut the meat of off the bones in large pieces; keep the bones.

  2. Heat in a heavy pot over medium-high heat until very hot. Sear the beef in batches without crowding the pot until well browned on at least two sides.

  3. Return all the beef to the pot with the bones. Add and just enough water to cover, a tablespoon of the the massaman curry paste and . Simmer gently until the beef is fork tender.

Massaman Curry

  1. In a second heavy pot, boil until reduced by about half and noticeably thicker.

  2. Add the rest of the paste and fry over medium-low heat, stirring constantly, until the coconut oil separates. If it sticks before then, loosen it with a splash of the remaining coconut milk.

  3. Stir in until the paste dissolves, then add half the , and .

  4. Lift the beef out of its braising liquid with tongs and add it to the curry with , and . Leave the bones behind unless there is still meat on them.

  5. Skim the fat and scum off the beef cooking liquid, then add just enough of it to the curry to keep everything submerged.

  6. Bring to a simmer and cook gently until the sweet potato is tender.

  7. Taste and adjust with the rest of the fish sauce, more sugar or more tamarind until sweet, salty and tangy are in balance. Serve with .

The beef is braised on its own first with a little paste and coconut milk, so it can go as long as it needs without the vegetables turning to mush. Meanwhile a fresh massaman paste, fragrant with dried chilies, cinnamon, cloves, nutmeg and cardamom, is fried in reduced coconut cream for the sauce.

Notes
  • Beef: bone-in short ribs give the richest result; beef chuck or shank also work. Keep the bones in the braise for flavour.
  • Sweet potato: use a white-fleshed variety; orange ones are too soft and sweet here. Waxy potatoes are the other classic choice.
  • Paste: this is half of Hot Thai Kitchen's massaman paste recipe. Make the full batch and freeze the other half for next time, or use 5 to 6 tablespoons of good store-bought paste.
  • Season at the end. The saltiness depends on the paste and how much braising liquid you add, so taste and adjust with fish sauce, palm sugar and tamarind until it is sweet, salty and tangy in balance.
Storage

Keeps 4 days in the fridge and improves overnight. Freezes well for 3 months; the sweet potato softens a little.

Make Ahead

Braise the beef a day ahead and chill it in its liquid; lift off the fat before finishing the curry. The paste keeps a week in the fridge or 3 months frozen.
