455 g pork fatback, in one slab

30 g bonito flakes (katsuobushi)
30 g salted dried anchovies or sardines (niboshi), whole
30 g dried shiitake, whole
500 g light soy sauce
5 g sugar

Chashu Pork Belly
905 to 1130 g skinless pork belly, in one slab
1 Tokyo negi (long green onion), green part only, or the green top of a leek
4 slices fresh ginger, unpeeled, from a 2.5 cm piece, thinly sliced
15 ml neutral oil
235 ml sake
235 ml soy sauce
475 ml water
160 ml sugar

120 ml soy sauce
120 ml mirin
120 ml sake, or water
10 ml sugar
Mayu (Black Garlic Oil)
59 ml toasted sesame oil
5 cloves garlic, finely grated
