Method

  1. Bring a large pot of water to the boil and salt it well; it should taste pleasantly seasoned.

  2. Trim the hard rind from the , then slice it about 5 mm (¼ in) thick and cut the slices into strips roughly 1 cm (⅜ in) wide. Keep the rind to flavour a soup.

  3. Put the guanciale into a cold non-stick pan and set it over medium-high heat. Let it sizzle in its own fat for about , stirring now and then.

  8. Move the pan off the heat entirely. Pour in the egg cream and toss quickly and constantly so the residual heat thickens it. Loosen with a little more pasta water if needed.

  9. Stir the guanciale back through, toss once more, and serve at once with extra and a little more pepper on top.

Ragù alla Bolognese

  1. Heat the in a heavy saucepan over medium heat, add the and spread it out with the back of a ladle. Let it brown for a few minutes, then add the , and and cook for , stirring.

Spinach Egg Pasta

  1. Put the in a pan with a splash of water, cover and cook until completely wilted.

  2. Drain, let it cool, then squeeze out as much water as you can with your hands. Blend to a smooth purée; you should have about .
