Method
Pink Turnip Pickles

Without a vertical spit, the trick is to thread the marinated thighs loosely on skewers so the edges catch and char on a hot grill, then slice them and crisp them in olive oil the way a shawarma stand does. Toum, the fluffy Lebanese garlic sauce, and bright pink turnip pickles turn it into the full sandwich-shop spread.
Notes
- Start the pickles first: they need at least 3 days in the fridge to turn pink and tangy. The beet gives the colour.
- Toum takes patience. Add the oil a drop at a time until the garlic turns creamy and thick; only then can you pour in a thin stream. If it splits, start again with a fresh clove and a little salt and slowly whisk the broken mix back in.
- Remove green sprouts from the garlic for toum; they make it bitter and harsh.
- Oven method: roast the marinated thighs and onion in a single layer on a lined sheet pan at 260°C (500°F) in the upper third of the oven for about 30 minutes, turning halfway, and finish under the broiler if needed.
- Stovetop method: pat the thighs dry and sear them in batches in a little olive oil over medium-high heat, about 6 minutes then 4 more after turning; slice and crisp the slices in a clean pan.
- Serve in warm pita with lettuce, tomato, the pickles and both sauces, or as a platter.
Storage
Chicken keeps 3 days in the fridge. Toum keeps 2 to 3 weeks in a sealed jar in the fridge. The pickles keep a couple of months refrigerated.
Make Ahead
Marinate the chicken up to a day ahead. Make the tahini sauce a day or two ahead and bring it to room temperature to serve.
