1.98 lb dried Tarbais, cannellini or other runner-type white beans
1.49 lb fresh ham hock with its skin
16 oz boneless pork shoulder, trimmed of excess fat, cut into 2.5 cm chunks
12.5 oz fresh pork skin with a 6 mm layer of hard fat
¾ tsp flaky sea salt
black pepper, about ten grinds, to taste
Day Two: Pork and Bean Ragout
2.75 oz rendered duck fat
16 oz yellow onions, chopped
12.5 oz small carrots, cut into 6 mm rounds
8 oz piece of ventrèche or pancetta
1 head head of garlic, loose papery skins removed
1 large plum tomato, peeled, seeded and chopped
4 sprigs flat leaf parsley
3 stalks small celery ribs
2 sprigs thyme
1 leaf Turkish bay leaf
8 ½ cups lightly salted chicken stock
Day Three: Assemble and Bake
6 confit duck legs, homemade or store-bought
4 oz pork fatback
4 cloves small garlic cloves, peeled
16 oz Toulouse sausages, or other mild, fresh garlicky pork sausages
2 tbsp fresh bread crumbs
2 tbsp walnut oil
