675 g fresh ham hock with its skin
450 g boneless pork shoulder, trimmed of excess fat, cut into 2.5 cm chunks
350 g fresh pork skin with a 6 mm layer of hard fat
≈ 2 g flaky sea salt
black pepper, about ten grinds, to taste
Day Two: Pork and Bean Ragout
75 g rendered duck fat
450 g yellow onions, chopped
350 g small carrots, cut into 6 mm rounds
225 g piece of ventrèche or pancetta
≈ 40 g head of garlic, loose papery skins removed
100 g large plum tomato, peeled, seeded and chopped
≈ 4 g flat leaf parsley
≈ 51 g small celery ribs
≈ 2 g thyme
≈ 0.2 g Turkish bay leaf
≈ 2030 g lightly salted chicken stock
Day Three: Assemble and Bake
≈ 550 g confit duck legs, homemade or store-bought
115 g pork fatback
≈ 12 g small garlic cloves, peeled
450 g Toulouse sausages, or other mild, fresh garlicky pork sausages

≈ 27 g walnut oil
