Beef Stroganoff with Straw Potatoes

Beef

2 tbspunsalted butter
1small yellow onion, thinly sliced
1.5 lbbeef tenderloin, cut into strips about 8 cm x 2.5 cm x 3 mm
kosher salt, to taste
black pepper, to taste, freshly ground

Straw Potatoes

4russet potatoes, peeled and cut into 3 mm matchsticks
kosher salt, to taste
2 tbspparsley, finely chopped
1.5 lcanola oil, for frying (to a depth of 4 cm)
