Murgh makhani the way North Indian homes and dhabas make it: the chicken marinates twice, first in lemon and chili, then in spiced yogurt, and is seared until the marinade dries onto it. The gravy gets its body from tomatoes blended with cashews and a little fried onion, so it is rich and mild rather than sour, and a last handful of crushed kasuri methi gives it the unmistakable restaurant aroma.

Notes
  • Tomatoes decide the colour and taste. Use ripe, sweet ones. If yours are sharp, the fried onion in the puree softens the acidity; a 400 g can of whole peeled tomatoes also works in place of fresh.
  • Kashmiri chili gives colour without much heat. Paprika is the closest substitute.
  • No cashews? Leave them out, cut the hot water to 120 ml and use 60 to 80 ml extra cream instead. Blanched almonds (soaked, skinned) also work.
  • For a charred, tandoor-like finish, thread the marinated chicken on skewers and grill or broil until spotted black at the edges, then add to the gravy.
  • Butter chicken is meant to be mild. Resist adding more ground spice; finish with extra butter instead.
Storage

Keeps 3 days in a covered container in the fridge, or 2 months frozen (freeze before adding the cream if you can). Reheat gently with a splash of water.

Make Ahead

Marinate the chicken the night before. The gravy can be made a day ahead up to the end of simmering; reheat it and continue with the chicken.
