15 g salted dried anchovies or sardines (niboshi), whole
15 g dried shiitake, whole
250 g light soy sauce

Chashu Pork Belly
455 to 565 g skinless pork belly, in one slab
½ Tokyo negi (long green onion), green part only, or the green top of a leek
2 slices fresh ginger, unpeeled, from a 2.5 cm piece, thinly sliced
7.5 ml neutral oil
120 ml sake
120 ml soy sauce
235 ml water
79 ml sugar

Mayu (Black Garlic Oil)
30 ml toasted sesame oil
2 ½ cloves garlic, finely grated
