Lisa Fain layers ancho, pasilla, guajillo, costeño, árbol and two kinds of chipotle, so the gravy tastes of chiles first and spice second. Hand-cut beef instead of ground keeps its bite through the long simmer, and a spoonful of masa and a little Mexican chocolate at the end give it body and a dark, rounded finish.
Notes
- Chiles: if you cannot find them all, use six to eight anchos and the two chipotles in adobo, soaked and puréed the same way.
- Soaking water: discard it; it tastes bitter. Blend the chiles with fresh water.
- Taste as you go: check the pot every hour. If the flavour seems muted add more of any spice, and if it gets too thick add more water, coffee or beer.
- The beef: buy a well marbled chuck roast and cut it yourself; it stays juicy where pre-cut stew meat dries out.
- To serve: grated cheddar, chopped onion and warm tortillas. Beans, if you must, go on the side.
Storage
Keeps covered in the fridge for 4 days and freezes well for 3 months. It is even better the next day.
